Besan (chickpea flour) is produced by de-husking and milling brown (desi) chick peas. Has a rich nutty flavour. May be referred to in recipes as “gram flour”.
USES: As a binding or thickening agent in many recipes and used widely in Indian and Middle Eastern cooking for pancakes, dumplings and sweetmeat – commonly used for pakora batter.
